Bami goreng, fried noodles. Originally a Chinese recipe, but also known from Indonesian and Surinamese cuisine. Super easy to make, quick to prepare and fantastically tasty. You don't need a package or bag for this at all and I will tell you how to make the tastiest bami goreng yourself.

Most people use a packet or bag to make bami goreng. Now I'm not anti packets or bags, but making your own is just much more fun. You know exactly what you are eating and you can completely customize the dish to your own taste.

The secret of my bami goreng

The 'secret' of my bami goreng is trassi. Trassi is fermented shrimp paste. No, don't click away right away because you can find trassi at the supermarket around the corner. Trassi is a seasoning that is often used in Indonesian cuisine. Trassi can smell a bit strong, but believe me, it takes this bami goreng from tasty to very tasty!

Snelle bami why

The basis of my bami goreng is largely vegetarian. With the exception of the trassi of course. I like to serve a fried egg and prawn crackers with the noodles. Sometimes I serve theregypsophilawith homemadesatay saucebee. Fried onions, some crumbled nuts or pickles such as Atjar also taste good with it. If you want meat in your bami goreng, you can choose to fry some bacon or cubes of ham. Also very tasty. I use a vegetable package for extra quick bami goreng. That saves you a lot of cutting time and you immediately have a tasty pile of vegetables in your noodles.

What you need (ingredients):

  • 400 gram noodles vegetables (pre-cut vegetable package)
  • 250 gram mie
  • 2 cloves garlic
  • 1 ui
  • 1 Red pepper
  • 2 tablespoons sweet snap
  • 1 tablespoon soy sauce
  • 2 teaspoons route
  • 2 teaspoons cumin
  • 1 teaspoon ginger (fresh, grated)
  • 1 teaspoon ketoembar
  • oil, pepper, salt

HOW TO MAKE IT (preparation method):

  • Cook the noodles in a pan with a pinch of salt until al dente and then drain.

  • Finely chop the onion and garlic. Cut the red pepper into thin rings (remove the seeds if necessary).

  • Put a little oil in a wok and fry the onion, garlic and pepper.

  • Then add the ginger and trassi and fry briefly.

  • Then add the bami vegetable package and stir-fry until the vegetables are done. Keep the bean sprouts from the package aside and add it at the end.

  • In the meantime, season the vegetables with the cumin, ketoembar, ketjap manis, soy sauce and a little salt, pepper and extra ketjap manis to taste.

  • Add the noodles to the vegetables. Briefly stir fry and enjoy!

Nice with: fried egg, fried onions, atjar, chicken satay,satay sauce, nuts and/or prawn crackers.

    Looks good! But isn't it true that the ratio of ketoembar-djinten (cumin) is 2:1 instead of 1:2?
    Cumin is otherwise so overpowering?

    Hey Eef,
    question: 1 tablespoon of soy sauce, which one do you use here? And, ketjap is also soy sauce... can I just use an extra tablespoon of ketjap?

      Hi Tonny,

      Ketjap manis is really different from soy sauce, Ketjap is much thicker and more of a sweet thick sauce. Soy sauce is thinner and I also use both in the noodles, delicious :-). I like to use Lee Kum Kee, ABC or Vanka-Kawat Kaki tiga ketjap medja for the ketjap. For the soy sauce, Kikkoman or Lee Kum Kee are the tastiest (note: choose light soy sauce, dark or dark soy sauce is something else). Greetings,

    Just made the recipe with thin noodles. They didn't have trassie and ketoembar at my supermarket, but the noodles were still very tasty without them. Used organic bacon strips to give it more flavor.

    I made this last weekend and it was really tasty! So much better than those herb bags with Bami herbs ????. Eef has a new fan! I was just a little too enthusiastic with the chili pepper ???????? next time a little less. That trassie is really an invention and is now standard on my shopping list. Why is that jar so small in the store?

    Just curious about the size indication... One teaspoon is different from another ;). I have those official spoons with size indications. Have you used that too? Or really the tablespoon and teaspoon?

      Hi Elianne! Eef used real teaspoons and tablespoons (otherwise she mentions the dimensions of the scoop). I never take it very closely or very precisely with tl and el (see this more as a guideline). Just feel it and taste it in between to see if it's to my taste 🙂 .
