Can an apple pie be too sweet?

The favorite Swabian actually found this cake too sweet. So it can work if you live with me and consume less and less sugar. At some point you get used to it and become sensitive to sweet things.I thought but I stay with the original recipe.Only on the amount of butter I screwed something.Grandma takes an incredible 250 g.I also followed the tip and used some apple juice to cook the apples.

Self -picked apples taste best with Grandma's apple pie

The quality of the apples is of course also important.Since we are back with the kidsPicking apples were in the old country, I just have fresh apples at home. For the apple pie, I chose the somewhat sour varieties (Boskop and Elstar) so that there is a small balance to the sweet cake.Nevertheless, I have to rely on the judgment of the target group in this cake (Swabian, children and colleagues). It's all too sweet for me.

Baking is a bit like a blind flight. In this case, however, I had a great navigation device, because Grandma Waltraut’s apple pie is such a classic in Ines family, so nothing could go wrong. This also increases my popularity with colleagues. There is nothing like a decent bribery 🙂 And for you it means that you can definitely bake a delicious apple pie.

For the filling:

  • 7-8Large apples (I recommend a mix of Boskop and Elstar),peeled, gutted and cut into thin slices
  • 1/2HEButter
  • A splash of apple juice

For the floor and the crumble:

  • 250gWheat flour or spelled flour(Type 1050)
  • 200gFine sugar
  • 1TLBackpulver
  • 200gCold butter,in pieces

For garnishing (optional):

  • powdered sugar

  1. Preheat the oven to 200 ° C and spread a round springform pan (Ø 24 cm) including the walls with butter and then laid out the floor with baking paper.

Tipp: You can also put the oven on the air at 180 ° C, then the apple pie will be crispier and the crumble caramelize more. Then you have to make sure that the cake does not become too brown.

  2. Melt 1/2 tablespoons of butter on a medium level in a large, deep pan. Then stir the apple pieces and a splash of apple juice. But only very little juice so that the cake floor does not become too mushy. Then cook for a few minutes and stir from time to time. Then remove from the stove and set aside to cool down.

  3. Mix the flour, the sugar and the baking powder in a mixing bowl. Now put the butter in the dry mix, mix and rub crumbly so that it results in rough sprinkles.

Tipp: I like to put the butter in the frozen compartment until it is hard. Then I rub the butter into the dry ingredients with a vegetable disc. Now I form to sprinkle them with my fingers.Alternatively, you can also take two knives and cut the butter into the flour until you have small pieces of butter. Then knead the mix with your fingers.Grandma says best with her hands!

  4. Spread half of the crumble mix on the bottom of the prepared springform pan. Then press together and also spread it on the walls of the mold (approx. 1-2 cm high). Then put in the preheated oven and bake for 5 minutes. This pre -baking prevents her from soaking the soil with a later filling.IMPORTANT: You absolutely have to stay with it, because the floor becomes brown very quickly.

  5. Now take the springform pan out of the oven and spread the apple cuts over it.Now scatter the rest of the crumble mix evenly and put the apple pie back in the oven and bake for 1 hour until it is golden brown.

Danger: If the apple pie begins to get brown, you can cover it with aluminum foil for the last 15 minutes. In some stoves, 45 minutes are also enough at 200 ° C.Every oven is different!

  6. Then take Grandma's apple pie out of the oven with crumbs (apple crumbs) and let it cool completely before you dismiss the walls of the springform pan.

  7. Enjoy!
