Step 1: Prepare dough

First, the dough for the Florentine cookies is prepared. To do this, put sugar, honey, butter, whipped cream and salt in a saucepan and heat the mixture until the butter and sugar have melted. Now let the mixture boil until it is golden yellow and starts to turn brown. The liquid mixture is then mixed with flaked almonds and sunflower seeds.

Step 2: Bake the dough and cut it out

At this point you have 2 options for baking the Florentines:

Version 1:Place the entire dough on a baking sheet lined with baking paper and bake until golden brown. Let them cool briefly and then cut out the Florentines from them. The result is crispy Florentines that are slightly thicker. I prefer this variant. That's why she can be seen in the video. I like to cut out different sized Florentines, which adds some variety to the cookie plate.

Variant 2:If you want wafer-thin Florentines, place the mixture in portions (each about the size of a walnut) on a baking tray lined with baking paper. The dough will spread a little. After baking, take a round cookie cutter in the desired Florentine size. Place the cutter over a portion of dough and use circular movements to form an even circle out of the dough. Once the Florentines cool, they will become firm and crispy.

Step 3: Decorate and serve Florentines

Ingredients

  • 175 g Zucker
  • 75 g Honig*
  • 125 g Butter
  • 150 ml whipped cream
  • 1 Prise Salt
  • 200 g Almond flakes
  • 125 g Sunflower seeds
  • 150 g Dark chocolate couverture* alternatively whole milk or white chocolate

Instructions

  • Preheat the oven to 170 °C top and bottom heat. Line a baking tray with baking paper.

  • Heat sugar, honey, butter, heavy cream and salt in a small saucepan until butter and sugar are melted. Bring the mixture to the boil until it is golden yellow and begins to brown.

  • Pour the sugar mixture into a mixing bowl, add the flaked almonds and sunflower seeds and mix well. Then pour the mixture onto a baking tray.

Variant for cutting out:

  • Bake in a preheated oven at 170 °C for about 15 minutes until the mixture has turned golden brown. Then let the Florentine plate cool slightly and cut out circles using different sized round cutters.

Version without cutting out:

  • Using teaspoons, place the dough in portions about the size of a walnut, leaving some space between them, on a baking tray. Bake in the preheated oven for about 10 minutes until the Florentines are golden brown. Then immediately after baking, take a round cookie cutter that is about the same size as the Florentines. Carefully place the cutter over each Florentine and use circular movements to shape the Florentine cookie back into a circle.

  • Allow the Florentines to cool completely, then decorate with melted chocolate if desired.

Vegane Variante:If you replace honey, butter and whipped cream with the respective plant-based equivalent, you can easily prepare the Florentine cookies vegan.
