Onion recipes | Pickeled Red Onions - Onion Mustard - Onion Chutney (1)According to legend, onions are supposed to be planted in the astrological sign of Capricorn. The onion is one of our most popular vegetable plants and is used almost all year round. In today's post I would like to share with you some great DIY onion recipes.

Onions don't just cause tears

We mainly use onions in our kitchen. However, you can also find recipes in traditional works about home remedies in which they really do a good service to people, for example against colds by taking oneZwiebelhonigs. In today's post I would like to introduce you to three culinary recipes that have been with me for a while and that I always enjoy preparing, especially in the winter months.

Pickled red onions – 1 jar (400 ml)

  • 3 medium red onions
  • 1 thumb-sized piece of ginger
  • 150 ml organic apple cider vinegar or mild white wine vinegar
  • 170ml water
  • 1 tsp salt
  • 80g sugar
  • 1 tsp peppercorns

  1. Bring the water and vinegar to the boil and add salt and sugar. Wait until the sugar has completely dissolved.
  2. Meanwhile, thinly slice the onion and place in a sterilized screw-top jar.
  3. Add the cooled liquid with the pepper.

It tastes absolutely delicious with grilled food, burgers, tacos and I personally also like it on pizza. Usually lasts longer than a month in the refrigerator.

Onion mustard

The onion mustard is made in two steps. In a first step the mustard is made, in a second the onion mustard. If you don't want to make the mustard yourself, you can of course also use one from the supermarket.

Part 1 – Mustard – for a jar of 400 ml

  • 80 g mustard seeds, whole or ground
  • 124 ml organic apple cider vinegar or mild white balsamic
  • 41 ml water
  • 24g sugar
  • 1 TL Honig
  • 1 tsp salt
  • 1 TL Pfeffer

  1. You put the whole mustard seeds in a blender and mix them thoroughly, or you can use the ground mustard seeds straight away.
  2. In the meantime, put the water with the vinegar on the stove and let it boil.
  3. Then let everything cool to room temperature and add the honey.
  4. Mix the sugar and salt with the ground mustard seeds and pour the liquid over it again. Mix thoroughly with the mixer.
  5. Pour into sterilized jars with screw caps.

The taste will change over the next few days. The mustard will then become even milder.

Part 2 – Onion Mustard

Use as much mustard as you need and mix it with a finely chopped white onion.

Tastes absolutely delicious with grilled, Balkan cuisine or as a dip. Will last in the fridge for up to 4 months.

Kitchen helper included

Red onion chutney – 1 jar (400 ml)

  • 250 gr rote Zwiebl
  • 2 tbsp sunflower oil
  • 80g sugar
  • 50 ml red wine
  • 70 ml white wine vinegar
  • 1 bay leaf
  • salt and pepper

Optional: For more spiciness, add half a teaspoon of chili flakes.

  1. Peel the onions and cut them into rings.
  2. Heat the oil in a pot and sauté the onions in it and then add the wine and vinegar. Bring to the boil briefly.
  3. Add sugar and bay leaf and let everything simmer together over a low heat. Season with salt and pepper.
  4. Take sterile screw-top jars and pour the chutney into them.

Tastes really good as a spicy dip and with cheese. Will keep in the fridge for up to 2 months.

All of these recipes are also suitable as gifts. Personally, I think it's quite nice, because in the spirit of sustainability we often throw away food. And hand on heart – who hasn’t had too many onions at home?
