Valentine's Day or Valentine's Day... the two of us aren't big Valentine's Day celebraters. And yet we still love the days when everything is so bright red, pink or really colorful. For this reason, we have come up with a super tasty and quick Valentine's treat for 2024 that you can of course bake all year round. Our Red Velvet Cupcakes are a really tasty mess that you should treat yourself to every now and then. So get to work on the baking ingredients and conjure up your own cookies on your plate in time for the weekend.

The hype about cookies...

I don't know what it's like in your area, but we've seen quite a few shops popping up that only sell one product. Cookies! These come in different versions. There are different doughs. From chocolaty to caramel to fruity. And then a different topping is added. Cream cheese, chocolate, fruit puree and others. To be completely honest, these stores also gave us the idea of ​​baking our go-to red velvet cookie. We also topped it with cream cheese cream, pistachios and flash-frozen strawberries.

We haven't bought cookies like this yet. So we don't even know if they taste exactly like we imagine the most delicious cookies to be. They look great, but we can do that ourselves...! Why have we never bought any? In this case, we are simply too stingy to pay at least 5 euros for a to-go cookie. The cookie has to be a real blast to make it worth it. With just a little work, you can get our Red Velvet Cookies for less than 9 euros. And then immediately 12 pieces...!

Cookies - crunchy or chewy?

When it comes to cookies - and by that I mean the ones that we have all known for so many years and that come from the USA. Really delicious cookies that are slightly crispy on the outside and incredibly chewy on the inside. I don't know if that word works for all of you. But we think that there is simply no sensible word in German that perfectly describes the consistency. Even if you translate the word “chewy” it comes out something like viscous or viscous. And that doesn't completely hit the nail on the head.

Recipe

Ingredients:

The dough:
125 g Butter
150g brown sugar
20 g sugar beet syrup
1 egg (size L)
200g flour
15 g Cocoa
1 1/2 TL Backpulver
1/2 teaspoon baking soda
1 pinch of salt
1 TL Vanilleextrakt
Red food coloring
200g white chocolate, chopped

The creme:
250 g Mascarpone
175g cream cheese
2 TL Vanilleextrakt
Chopped pistachios and dried strawberries for decoration

That's how it's done:
Beat the butter and brown sugar together until creamy.

Add the egg and stir it in well.

Mix the flour, cocoa, baking powder, baking soda and a pinch of salt.

Add the vanilla extract and add red food coloring as desired until the dough is the desired red color.

Carefully add the chopped white chocolate and stir it in.

Form the dough into 12 equal-sized balls and place them on the prepared baking sheet.

Bake the cookies for about 12 minutes, remove them from the oven and let them cool completely.

In a separate bowl, mix the mascarpone, cream cheese and vanilla extract into a smooth cream. Spread generously over the cooled cookies and decorate with chopped pistachios and dried strawberries if desired.
